I have to thank Heather over at Life at Sonic Speed for sharing this yumminess with me! I made it a few nights ago, for Alex and I to try...we ate the entire pan! (in our defense, it was all we had for dinner) :) I'm making it again, tonight, for our homegroup.
The recipe is easy...only 4 ingredients!
Cream Cheese
Rotel
Black Beans
Shredded Cheese
Take the above ingredients and layer them in the order listed. Bake at 350 degrees for 10-15 mins, just to warm through. Serve with tortilla chips.
Delicious!!

mmmm...I love dips! I could easily eat that whole dish myself, without my husbands help! haha.
we really dont have it....im thinking i could sub it with salsa? what do you think? there are so many things we cant get here, its not fun at times! My bloggy friend from the states sent me a care package with a whole ton of stuff that I cant get and really miss from living in New York! But I have never heard of Rotel.

Oh Jill! Only the fact I have my monthly weigh in at Weight Watchers this Saturday (and I'm still trying to lose the weight I gained over christmas) is stopping me from going to the shops to get the ingredients for that yummy dish!

Right.....so i found toms with chillies! but now I cant find black beans...so I am using refried beans. I will let you know how it is tomorrow....oh the joys of living in Africa.....the main food here is beans and yet i cant find black ones anywhere. Whats up with that?!

Oh this sounds good. I may make it as dinner myself and just add a salad. I think my kids would love it.
And for those so inclined, or b/c they don't have rotel... here's a recipe for it...
* 1 gallon tomato, peeled & quartered
* 1 large onion, finely chopped
* 3 bell peppers, finely chopped
* 1/2 cup white vinegar
* 2 tablespoons canning salt
* 10 jalapeno peppers, chopped (for hot, or 7 for med. or mild use 4)
* 1 1/2 cups sugar
Directions
1. Put all ingredients in large enamel pot.
2. Bring to boil. Reduce heat and simmer 30 minutes, stirring occasionally.
3. Pour into sterilized pints. Seal and process in boiling water bath 5 minutes.
I can't stop thinking about this- I MUST make it this week. can't wait! :)
